Cinco de Mayo is May 5th, which means you should have had 5 shots of Tequilla by noon :)

My wife found this recipe over a year ago, and when we tried it, it became one of our favorites. This Mexican street corn is the best! It's super easy, loads of flavor, and perfect for a warm summer day

What you need

5 fresh corn, husked

For the Spread:
1/4 cup mayonnaise
2 Tablespoons sour cream
1/2 teaspoon garlic salt
Juice from one lime


For the Topping:
1/4 cup grated Cotija cheese
1 teaspoon smoked paprika (or chili powder if you want heat)
Chopped cilantro, for garnish 


Preheat your grill to medium heat • 375 degrees F • Place corn directly over heat • cook corn for 10-15 minutes and make sure to turn often, until you start seeing the kernels change color • while your cooking your corn, combine all the ingredients for the spread in a bowl • and topping ingredients in a separate bowl • open a bottle of Tequila and take 2 shots • when corn is done, take off the grill • have another shot • smear the spread over the corn cob • sprinkle corn evenly with toppings • and serve that corn ASAP. It doesn't taste good when it's cold
