Creamy Channa Masala Bowties

There are very few excuses that acceptable for not having something
planned for this Sunday...Wait. Did you forget what Sunday was?

Its Mother's Day. Yeah. And you have nothing planned. So I'm here to
save you from the guilt trip I'm sure may come your way if you don't
fawn over and spoil the most important woman in your world, your mom.

My mom, who everyone lovingly calls Mandy, is the pioneer of
desi-fusion food in my world and so I wanted to pay ode to her
influence this Mothers Day. For her strong presence in my life and
pushing me to chase after my dreams, I borrowed a little of her flair
of creating Punjabi Pasta with this Creamy Channa Masala Bowties.

The texture is incredible in this dish and the bold flavors will
definitely satisfy.

Ingredient

1 can large chickpeas
1 tbsp olive oil
1 tsp cumin seeds
2 tbsp finely minced garlic
1 large onion, finely chopped
1 tbsp ginger - finely chopped
1 1/2 tomato - chopped
1/2 tbs turmeric
1 tbsp salt
1/2 tsp garam masala
1 tbsp chaat masala (optional)
2 red thai chilies
1 cup heavy cream
5 slabs of bacon - optional
1/2 cup or more grated parmesan

IF USING BACON:

1. Heat a large pot at medium, chop bacon to bite sized pieces and
cook through until you see a bit of crispy bacon. Add cumin seeds and
cook until they turn dark brown/red. Make sure you do not burn the
cumin seeds. Mix occasionally. Continue with recipe below

IF NOT USING BACON:

1. Heat a large pot at medium heat with your oil. Add cumin seeds and
cook until they turn dark brown/red. Make sure you do not burn the
cumin seeds. Mix occasionally. (I used a pre-made tarkha that consists
of onions, ginger, garlic, chilies, tomatoes, and spices. Use 2 tbsp
or more. If you don't have, follow recipe below)

2. Add garlic, onions, ginger and cook at medium/low heat until golden
brown. Stir occasionally for 7-10 minutes

3. Add tomatoes and bring heat to low. Simmer until tomatoes soften.

4. Add you turmeric, salt, garam masala, chillies - let cook for 2
minutes on medium heat.

5. Add can of chickpeas and cook for 5-7 minutes

6. Add cream and grated parmesan. Optional - throw in garam masala

7. Let cook for 5 mins

8. Mix in your pasta, stir, and serve
